Hi there! Happy hump day, everyone! Hope the weather is a little less dreary where you are... it's quite rainy and cloudy in Raleigh this morning.
Last night I made a successful dinner I wanted to share with you because it was all very easy. Pork with an apricot/whiskey/bbq sauce and brussel sprout fritters topped with {light} sour cream:
The sauce is so easy it's almost embarrassing. In fact, I think Chrissy Teigen might have done a sauce like this before over chicken. Here it goes:
Ingredients:
- 2 heaping tablespoons of apricot preserves
- about 1/4 cup whiskey {i used the cheap whiskey in the back of my fridge}
- about 1/4 cup of your favorite bbq sauce {i used sweet baby ray's, which in my opinion is the best!}
Directions:
1. Combine all three ingredients in small sauce pan and mix well.
2. Heat over medium heat and let bubble to burn off the alcohol.
3. Pour over chicken, pork, etc and enjoy the sweet, tangy, deliciousness!
As for the brussel sprout fritters, these were a find from thekitchn.com, which directed me "Heather Christo Cooks"-- here, where you can find the recipe. I was intrigued when I saw this recipe because I have a hard time getting R to eat brussel sprouts, but I felt like he would enjoy the fritters, which would be similar to a latke. I was right! He loved them.
To be able to make these quickly on a week night, I used pre-shredded brussel sprouts that I bought at Trader Joe's for $2.49. That way I didn't have to bust out the mandolin and risk cutting myself. I followed the recipe exactly (although I halfed it) except for that I used half the amount of goat cheese. I know, I know... but goat cheese is the best part, right?! I completely agree, but R isn't crazy about goat cheese, so I thought I'd just use half. I thought they came out GREAT.
I will definitely be making the fritters again, especially when we have company over for dinner because they are easy but look sort of fancy and special.
What do you think? Are you a goat cheese fan? What about brussel sprouts? I find that both of these ingredients seem to be either a LOVE or HATE situation for a lot of people. I happen to love both.
